This second category includes millets like Kodo, Foxtail, and Small
millets. Some varieties have an inedible seed coat that must be
removed before eating. These millets are less common since manual
processing is required before food preparation. Iron, calcium, and
phosphorus are just a few of the numerous micronutrients found in
millet.
Also, they take longer to digest than rapidly digestible foods, so there
isn’t the same blood sugar surge. Thus, the inclusion of millet in your
diet can aid in the management of diabetes.
Millets are therefore beneficial to health. Environmental benefits
come from millet production. It’s because they are mostly crops
that are fed by rain. As a result, they do not place a strain on our
water supplies, which are already in decline. These grain crops
can also thrive without pesticides because they don’t attract pests.
