        materials. People love to come to our restaurant to try these dishes.
        The  response was amazing.  People  were  happy  and  proud  to  see
        millet that they might not have eaten in a long time, or that they
        grew  up  eating,  and  find  it  on  the  menu,”  said  Chef  Thomas  of
        people’s reaction to millet. Speaking about the guest experience at
        the Restaurant, Chef Thomas said Bombay Canteen’s main focus is
        food and guest experience.
         Why Should Millets Be Served in Restaurants?

        For those who are allergic to gluten, millets are an excellent substitute.
        They  are  effective  as  grains  for  weight  loss  since  they’re  packed
        with high natural fibre content. They taste amazing and are simple
        to digest and can be considered an excellent source of carbohydrates,
        protein,  fibre,  and  amino  acids.  The  hospitality  industry  in  India
        utilizes millet in the following ways:




            •  Dishes made of millet: A lot of hotels and restaurants have
                begun to include millet biryanis, dosas idlis, and upmas on
                their menus.
            •  Millet-based bread: As alternative options for conventional
                bread, certain restaurants and cafes are now offering millet-
                based bread like ragi bread or bajra bread.
            •  Millet-based desserts: Millets are also being used in desserts,
                such as millet pudding, millet kheer, and millet laddoos.

                healthy and nutritious drinks, such as millet smoothies and
                millet-based energy drinks.
            •  Millet-based snacks: Many hotels and restaurants are now
                offering  millet-based  snacks,  such  as  millet  chips,  millet
                popcorn, and millet-based trail mixes.
