        in nutrients such as iron, calcium, and protein, and are also gluten-
        free, making them a good option for people with celiac disease or
        gluten intolerance. Overall, millets have a rich cultural and historical
        background in India, and their revival is seen as a way to promote
        sustainable agriculture, improve nutrition, and support the livelihoods
        of smallholder farmers.



        Scope of Millets in Hospitality Industry

        1. Use of Millets in Restaurants:

























        Millet is a staple food that contains mainly protein, but is the most
        underrated item on any restaurant menu. Although there were a few
        restaurants in India earlier that emphasized millets on the menu, they
        too did not last long. At the beginning of the year, the United Nations
        officially  declared  2018  as  the  International Year  of  the  Millet  to
        spread awareness.

        In an attempt to bring back the long-forgotten hero of the kitchen -
        millet - Punjab Grill recently came up with its Millet Menu Festival.
        The restaurant believes that millet is an underrated Indian superfood.
        “The nutritional value of millet transforms meals into a healthy yet
        delicious dish and adds a classic Indian touch,” said Vineet Manocha,
