        Introduction

India, a country renowned for its rich cultural heritage and vibrant
traditions, stands at the crossroads of modernity and tradition. While
striving for economic growth and technological advancement, India
grapples with profound challenges, including food security, poverty
reduction, and climate change adaptation. In this multifaceted
journey, the unassuming millets, often overshadowed by their larger
counterparts, offer a path to sustainable development that harmonizes
        tradition and innovation.

Millets, a group of small-seeded, drought-resistant crops with a rich
history in India, have come to symbolize resilience, adaptability,
and nutritional abundance. They thrive in diverse ecosystems and
provide an answer to a range of contemporary challenges, from
climate change mitigation to the economic empowerment of small-
        scale farmers.

This chapter explores the pivotal role of millets in India’s quest
