        The  recent  G-20  summit  held  in  Delhi  on  9  and  10  September

        2023 had several local cuisines on the menu including ‘innovative
        millet  dishes’.  It was an extension  of the  Indian  Government’s
        approach to celebrate the International Year of Millets, an extension
        of the National Year of Millets celebrated in 2018, and to increase its
        awareness and subsequent consumption. In this context, the authors,
        through this research, would like to highlight the scope and growth
        potential of millets.
        Millets, one of the oldest crops being cultivated in Asia and Africa
        lost their significance to rice and wheat in India, once the methods
        associated with the ‘Green Revolution’ became popular. Even today,
        India is the largest producer of millet in the world with an estimated
        production of about 11 million tons. The key areas associated with
